My brother-in-law is home for holidays and I wanted to treat him to a nice dessert. I decided on making mango mousse for two reasons - mangoes are the fruit of the season and he loves mangoes more than anything else..!!!
RECIPE: Mango Mousse

INGREDIENTS:
Whipping cream: 200 ml
Mango puree: ½ cup
Sugar : 3 tsp.
Lemon juice : 2 tsp
Gelatin: 1.5 tsp
METHOD:
Add sugar and lemon juice to half of the mango puree and put it on stove in simmer.
Add gelatin to the above puree and stir till it melts.
Remove from fire and mix it with remaining puree and let it cool.
Take 1/4th puree and distribute it evenly among empty moulds.
Refrigerate these moulds in fridge till the puree sets a bit, i.e., for
half an hour.
Whip the cream till soft peaks and refrigerate. Fold 3/4th of the puree with this whipped cream .
Take the moulds from the fridge and fill them with the whipped topping mixture. Place them back in the refrigerator and allow them to set for 6 hours or over night.
Serve chilled.

I used Tropolite Non Dairy whipped topping. You can find the same at bakery supply stores or even Q-Mart. Instead you can also whip heavy cream for the same.
