Rava Kesari

Rava kesari is a sweet dish made out of semolina. It is very popular as a prashad offering to the god. The beautiful texture, colour and vibrancy in the dish are a delight to both the eyes and the palette.




RECIPE: Rava Kesari

INGREDIENTS:

Rava - 1 cup
Ghee - 3 tbsp.
Sugar - 1 cup
Water - 2 cups
Green Cardamom - 3 pods
Small pinch of saffron colour or
small pinch of saffron flower threads
Chopped Cashews - 10



METHOD:

Pound the cardamoms into powder along with a spoonful of sugar and set aside. Combine the sugar and water in pan and set it over a high flame. Add the saffron to this mixture and allow it to come to a boil. Once it boils, lower the flame and let it simmer.

Meanwhile, on a low flame, heat up the ghee in a kadai, fry the cashews and keep aside. Next, add the rava to the ghee, stirring constantly. Stir the rava until the grains change color. Once the grains change colour turn off the heat.

Now add this rava gradually to the pan containing the sugar water solution while stirring continuously. Continue stirring the mixture until it begins to thicken, and coagulate in the center. Then, cover the mixture and switch of the flame, allowing the rava kesari to sit for five minutes.

Serve immediately.
