I love sandwiches for the simple fact that they are such no mess, on the go
snacking items. During my college days I never could find time to finish off
breakfast and my mom would hand me a sandwich wrapped in a tissue and send me
off. This veggie sandwich pepped with spices is my personal favourite and is
absolutely palate pleasing.
RECIPE: Spicy Veggie Sandwich

The following are the ingredients:
METHOD:
In a pan, fry the onion in a tsp. of oil. Add salt and sugar and fry till
the onion turns transparent.
To this add tomato, bell peppers, corn and sauté till tomato becomes mushy.
Then add, chilli powder, oregano, paneer and stir for a minute.
Turn off the stove, add yoghurt and mix.
Take this mixture on a slice of bread, add grated cheese and top it with
another slice.
Grill it and cut it in two diagonally. Serve hot with ketchup.
Makes 4 sandwiches.

Note:
For variation, you can add grated carrot, grated cauliflower and corn instead of bell peppers and paneer.
Tip:
I know, it’s difficult for some people to find oregano, basil, thyme herbs. If you stay in a city you will find it in supermarkets like Ratnadeep, Q-mart or any similar stores.
As a substitution for oregano, you can add ajwain. They almost taste the same.
